Just another day....

I suck at tennis. Anna Kournikova.... I definitely am not. The first time we played I fell on my butt twice. Lot's of padding there... so no harm done. David spent more time laughing at me than hitting the ball himself. Luckily the courts we go to have practice backboards as well, so I've been sticking to them for now. I actually asked a man there (he had just finished playing a match) for a couple of pointers and he winded up giving us a nice lesson and lots of tips. I still suck though. It's pretty sad that my back hand swing is better than my front hand swing.

Monday I had my stomach biopsy. I will go see my oncologist on Monday 2/25 to get the results. I'll post the results when I find out.

I was diagnosed with Celiac Disease in 2/07 and have not eaten bread in a year. I finally decided to bake some gluten-free bread in my bread machine and oh my..... warm, fresh bread.... god it was so good! My bread machine in old but it worked good enough for now. There's a new model out that actually has a "gluten-free" cycle on it that I really want. It's the Breadman TR875 2-Pound Breadmaker - pretty inexpensive on amazon... hint, hint.... my birthday's coming up. But of course I already sit around the house eating chocolate, drinking diet cherry chocolate dr. pepper..... and the last thing i need to put in my mouth is BREAD!!!!! But oooohhhhhh.... it was so yummy. There are so many things I miss eating - like Shipley's glazed donuts.... sigh..............................

I guess this is the only way that I can talk to you. Hope everything is fine with the test on Monday. I really miss my next door office mate. Mrs. Tubbs is in your old office now. It is just not the same. I hope you begin to feel better soon and have more energy because Kelly and I are really tired of coming up with kidnap plans and not being able to execute them. We need to have lunch or something. Kelly and I really want to devote a Saturday to you and besides David and the cats are tired of seeing you in your pajamas eating chocolate and surfing the net. I just want you to know that for the short time that we worked together you made an irreplacable dent in my life. You are greatly missed on a daily basis.

Kelly,
I was reading a little of your blog, and wish to be of help. I used to have Crohn's disease, although it is not the same as celiacs, it is an auto-immune disease. I have healed myself by changing my eating habits. As you are going through some major health issues, I would ask that you first pray about any advice I give you, I know that ONE thing doesn't work for EVERYONE.
Since 70% of our immune system is in our stomach, I will refer to what has healed my stomach.
I no longer eat sugar (hey, where did you go, come back) I know it is hard to think of. I had a friend telling me for 2 years to get off sugar before I could even, wrap my brain around it. I have replaced sugar with raw honey (lots of enzymes to help you digest). And I rarely miss sugar anymore. The other thing I would recommend is to drink raw milk, as you live in Texas this should be somewhat easy to find. I have to drive 60 miles one way to get mine. But I will tell you it healed my stomach, when nothing else would!! And PLEASE get off soda of any kind. I saw a video of blood cells, and immune system cells, taken before and after someone drank a soda. It actually shuts down your immune system for 7 hours according to this study.
I know it is extremely hard to give up foods, and drinks you love, but if it would improve your health wouldn't it be worth it? And as time goes on you don't miss them much anyway.

Let’s take a look at some of the other major components of a can of soda:
• Phosphoric Acid: Which can interfere with the body's ability to use calcium, leading to osteoporosis or softening of the teeth and bones. It also neutralizes the hydrochloric acid in your stomach, which can interfere with digestion, making it difficult to utilize nutrients.
• Sugar: It is a proven fact that sugar increases insulin levels, which can lead to high blood pressure, high cholesterol, heart disease, diabetes, weight gain, premature aging and many more negative side effects. Tiffany’s Gluten-Free Bread

1 cup brown rice flour
¼ cup lentil flour
1 cup masa harina
¼ cup tapioca flour
½ tsp sea salt
½ tsp baking soda
2 tsp aluminum-free, Gf, baking powder
1 cup water
1 tbsp instant yeast
1 tbsp raw honey
2 eggs
¼ cup grape seed oil
1 tbsp raw, apple-cider vinegar

In a large bowl mix water, yeast and honey, allow to rest while preparing other ingredients or about 5 minutes. In a separate bowl mix dry ingredients together. Stir eggs and grape seed oil into water mixture. Add dry ingredients and cider vinegar. Mix until well blended. Spoon into two, greased, medium sized bread pans. Cover and let it rise for 1 hour. Bake in pre-heated 350°F oven for 30-40 minutes.


Alternative cooking method:

After dough has risen. Heat a cast iron skillet, to medium low. Butter the pan lightly, then carefully spoon out 1 heaping tbsp of dough onto skillet, (slightly spread out each one) add as many as you can fit into the pan. Cook on low heat for 5 minutes per side, then turn again and cook an additional 3 minutes per side with a lid on
